TURKEY MEATLOAF MUFFINS
I posted this recipe on facebook a few months ago and some of you are asking for the recipe.
This is the perfect lunch for those of you on the go! A ‘no-brainer, fuel-focused meal’ that you can make ahead of time and turn to all week long for a quick on-the go-lunch or no-effort dinner. You can also do this with just eggs. Scramble the eggs add your condiments as if you were making an omelette, pour in the pan and let it cook.
Ingredients:
2 lbs raw ground organic turkey or chicken.
3 organic eggs
1/2 cup almond meal, 1/2 cup sliced organic almonds
1/2 tsp ground cumin
handful of chopped fresh organic parsley
1/2 tsp dried thyme
2 tsp dry yellow mustard
2 tsp fresh ground black pepper
1 tsp sea salt
2 tbsp organic garlic powder (2 cloves minced)
1 small organic sweet onion (finely chopped)
2 organic celery stalks (finely chopped)
Directions:
1. Preheat oven to 375 degrees.
2. Spray muffin pan with organic olive oil or coconut oil or just lightly butter
3. Mix all your ingredients together in one large bowl.
4. Roll the mixture into balls and place in muffin pan. Muffins should be about the size of a racquetball.
5. Bake for 40 minutes.
Makes 12 muffins.
